Christmas Bread

This Christmas bread is a Julekage, or “yule bread.”  Like most traditional Christmas bread, it has candied fruit (in this case, candied cherries) and is hearty and spicy.  Unlike fruitcake, Christmas bread is an actual “bread,” with a base of a yeast mixture, and contains less dense on the candied fruits!

Christmas Bread

INGREDIENTS:

  • 2 cakes (or packages) of Yeast
  • 3 cups of Scalded Milk
  • 1 cup of Sugar
  • 2 teaspoons of Salt
  • 1 cup of chopped Citron
  • 1/2 a teaspoon of Cardamom seed, crushed
  • 1/2 cup of room temperature Water
  • 1/2 cup of Butter
  • 2 beaten Eggs
  • 1 cup of Raisins
  • 1/2 cup of Candied Cherries
  • 9 – 10 cups of Flour

Dissolve the yeast in water.  Pour the scalded milk over the butter.  When it is room temperature, add the yeast, sugar, salt and approximately half of the flour.  Beat for 10 minutes.  One at a time, add the eggs.  Add the fruite, cardamom and enough of the flour to form a soft dough.  Knead the dough and place it into a greased bown to rise.  Let rise until it is light.  Knead and let it rise again.  Shape it into round loaves and place on a greased pan to rise for about an hour.

Brush the tops with egg yolk mixed with milk.  Bat in a 375° oven for 45 minutes.  Remove from oven and brush the tops with melted butter and sprinkle with a mixture of cinnamon and sugar.
