Swedish Creamed Potatoes

These are always popular at Christmas, it seems, and it’s a great dish to take to a pot luck.

INGREDIENTS:

  • 6 Tablespoons of Butter
  • 6 Cups of peeled and diced Red Potatoes (uncooked)
  • 1/4 teaspoon of White Pepper
  • 2 medium Onions cut into thin slices
  • 1-1/2 teaspoons of Salt
  • 3 tablespoons of Parsley or Dill

DIRECTIONS:

Melt 2 tablespoons of butter in a pan.  Add the the onions and cook until soft.  Put the onions into a casserole dish.  Melt the rest of the butter in the same pan and add the potatoes.  Saute them until they are golden brown and cooked about half-way through.  Put the potatoes into the casserole dish.

Add the salt, pepper and onions and mix thoroughly.  Add the cream and simmer, covered, over very low heat until the potatoes are cooked and tender – approximately 15 minutes, stirring occasionally.  Sprinkle the dill or parsley over the top just before serving.
