This Bon Bon Cookie recipe is a good one to partially make ahead of time and refrigerate, then bring out and finish when you need a nice, fresh batch of cookies!

INGREDIENTS:

  • 1-1/2 Cups of Chunky Peanut Butter
  • 1 Cup of Chopped Nuts
  • 6 Tablespoons of Butter
  • 2 Cups of finely chopped Dates
  • 2 Cups of Powdered Sugar
  • 12 ounce package of Chocolate Chips

DIRECTIONS:

Use your hands to mix together all ingredients except for the chocolate chips.  Refrigerate until the mixure is cool (or keep in refrigerator for several days if you want to do this part ahead).

Use a double boiler to melt the chocolate chips.  Remove from heat and carefully dip the balls in the chocolate chip mixture.  Place onto wax or parchment paper until they are cool and set.
