Swedish Creamed Potatoes

These are always popular at Christmas, it seems, and it’s a great dish to take to a pot luck.

INGREDIENTS:

• 6 Tablespoons of Butter
• 6 Cups of peeled and diced Red Potatoes (uncooked)
• 1/4 teaspoon of White Pepper
• 2 medium Onions cut into thin slices
• 1-1/2 teaspoons of Salt
• 3 tablespoons of Parsley or Dill

Calico Beans

From my Mom’s recipe file:

INGREDIENTS:

• 1 pound browned Ground Beef
• 1/2 pound cooked Bacon, broken up
• 1 cup of Chopped Onion (cook it with the beef)
• 1/2 cup of Ketchup (use organic ketchup to avoid high-fructose corn syrup for a more authentic result)
• 3/4 cup of Brown Sugar
• 1/2 cup of White Sugar
• 2 tabespoons of Vinegar
• 1 teaspoon of Dry Mustard
• 1 teaspoon of Salt
• 4 cans of Beans (details below)
