Swedish Creamed Potatoes
Swedish creamed potatoesare always popular at Christmas and special Sunday dinners, it seems, and it’s a great dish to take to a pot luck.

Ingredients
- 6 Tablespoons of Butter
- 6 Cups of peeled and diced Red Potatoes (uncooked)
- 1/4 teaspoon of White Pepper
- 2 medium Onions cut into thin slices
- 1-1/2 teaspoons of Salt
- 3 tablespoons of Parsley or Dill
Instructions
- Melt 2 tablespoons of butter in a pan
- Add the the onions and cook until soft
- Put the onions into a casserole dish
- Melt the rest of the butter in the same pan and add the potatoes
- Saute them until they are golden brown and cooked about half-way through
- Put the potatoes into the casserole dish
- Add the salt, pepper and onions and mix thoroughly
- Add the cream and simmer, covered, over very low heat until the potatoes are cooked and tender – approximately 15 minutes, stirring occasionally
- Sprinkle the dill or parsley over the top just before serving
